This week, we’re in Vienna with Stefan Doubek, the chef behind the two-Michelin-starred Restaurant Doubek, and his partner, Nora Pein, who leads the restaurant’s front of house.
Stefan spent years training in Vienna’s top kitchens, as well as at three-Michelin-starred Jordnær in Copenhagen, before he and Nora opened Restaurant Doubek. Within months of opening, the restaurant earned two Michelin stars, making Stefan one of the fastest chefs in Michelin history to earn two stars.
This is, without question, my favorite Vienna edition we’ve ever published. Stefan and Nora don’t just tell you where to eat—they teach you how to experience Vienna like a local. From mixing your own Spritzer (Austria’s classic wine spritzer) at vineyards inside the city to ordering Vienna’s most iconic dishes the way locals do (which most tourists get wrong); every recommendation comes with the exact dish to order, the exact cut of meat to ask for, or even the exact phrase to say.
In this edition, Stefan and Nora share:
• The restaurants they take every visiting chef to—including one with one of Austria’s best wine lists.
• The Viennese dishes you absolutely have to try—and the best places to eat them.
• The best coffee houses, desserts, wine bars, and wineries just minutes from the city.
• How to experience a traditional Heuriger, Vienna’s legendary wine taverns.
• The best Viennese food products to bring home—and exactly where to buy them.
And so much more.
A Google Map with every recommendation is included at the end of the interview.
