This week, we’re in Paris with Eugénie Béziat, Executive Chef of Michelin-starred L’Espadon at the Ritz Paris. After training in some of France’s leading restaurants, including three-starred Les Prés d’Eugénie and two-starred Restaurant Michel Sarran, she went on to earn her first Michelin star at La Flibuste in Villeneuve-Loubet. She achieved it in just 18 months at a restaurant once led by the Ritz’s very first chef, Auguste Escoffier.
