Welcome to The Relisher’s Puglia edition! This week, I met with Mirko Febbrile, one of the most exciting chefs to come out of the region. Born and raised in Puglia, Chef Febbrile trained at Noma in Copenhagen and earned a Michelin star at Braci in Singapore, where he’s now considered one of the country’s most exciting young chefs.
In 2023, he opened Fico—a laid-back Italian restaurant that quickly earned a Michelin Bib Gourmand, followed by Somma in 2024—a more refined, ingredient-driven concept that was recently featured on the Condé Nast Traveler 2025 Hot List, a rare honor that helped put Singapore on the global culinary map.
Below, the Puglian chef shares all of his favorite spots in his hometown—from restaurants and aperitivo bars to where to find the best mozzarella you’ll ever taste, plus his go-to places for pastries, gelato, and more.
