This week, we’re in New York City with Dominique Roy, Chef De Cuisine and partner of the iconic, three-Michelin-starred Eleven Madison Park.

Originally from Canada, Dominique trained under legendary three-Michelin-star chef Georges Blanc in France before representing Canada at both the Culinary World Cup and the Culinary Olympics.

At 25, he arrived in New York with a backpack and a bus ticket, knocked on the door of Eleven Madison Park, and cooked a piece of sea bass as his tryout. He got the job, and ten years later he runs one of the most celebrated kitchens on the planet alongside Daniel Humm: a restaurant that has held three Michelin stars for more than a decade, was named No. 1 on The World’s 50 Best Restaurants list, and became the first plant-based restaurant ever to earn three Michelin stars.
