Welcome to The Relisher’s first Zurich edition! This week, I spoke with Heiko Nieder, the two-Michelin-starred chef behind The Restaurant — one of Switzerland’s top dining destinations — at The Dolder Grand Hotel.
Chef Heiko is one of the most important chefs in modern Swiss fine dining. He has led the kitchen at The Dolder Grand for almost two decades, earning two Michelin stars and 19 points in Gault&Millau (one of Europe’s most respected restaurant guides, known for its 20-point scoring system).
