This week on The Relisher, we’re in Madrid with Mario Sandoval — one of Spain’s most celebrated chefs and the two-MICHELIN-starred force behind Coque.

Born and raised in Madrid, Mario took the reins of the original Coque, transforming his family’s restaurant into one of Spain’s leading dining destinations. Over the years, he’s earned nearly every accolade Spanish gastronomy has to offer: two Michelin stars (plus a Green Star for sustainability), the National Gastronomy Award for Best Head Chef and many more.

In this Madrid edition, Mario takes us to the best of the city — from the century-old vermouth bar to the shop where you’ll find Spain’s best anchovies and traditional delicacies, plus his favorite restaurants, tapas bars, and more. He’s never shared where he eats in an interview before.

And as a bonus, I asked one of my favorite travel writers, who lives in Madrid, to share his favorite hotels in the city.
