Welcome to the first Bordeaux edition of The Relisher. This week, I met with Bertrand Noeureuil, the two-Michelin-star chef now leading L’Observatoire du Gabriel in Bordeaux.

Chef Bertrand trained under some of France’s most legendary chefs, including Yannick Alléno at Le Meurice (three stars) and Arnaud Donckele at La Vague d’Or (three stars) in St. Tropez. Donckele later invited him to lead Plénitude – Cheval Blanc Paris (three stars), where he helped earn its three Michelin stars just six months after opening — a record that established Bertrand as one of France’s most exciting chefs.

In 2023, he moved to Bordeaux to take over L’Observatoire du Gabriel, where he quickly earned two Michelin stars and positioned the restaurant as one of the city’s leading gastronomic destinations.

Below, one of France’s top chefs reveals his favorite places in Bordeaux. What I love about this edition is how chef-level refined and travel-ready it is — it gives you exactly what you need for Bordeaux: the kind of brasserie chefs choose to celebrate at, wine cellars and vineyards most people have never even heard of, the bean-to-bar chocolatier he uses in his own restaurant, and so much more.
