Welcome to The Relisher’s fifth Paris edition! This week, I met with three-Michelin-starred chef Jérôme Banctel, the executive chef of Le Gabriel at La Réserve Hotel in Paris.

Chef Jérôme’s career has taken him to work alongside some of France’s most legendary figures, including Bernard Pacaud at L’Ambroisie (three stars) and Alain Senderens at Lucas Carton (three stars). Below, the local Parisian chef reveals his favorite restaurants, wine bars, patisseries, stores, and more—a Google Map with all his picks is included at the end of the article.

What I love about this edition is how it reveals where a three-star chef actually eats in Paris—classic, personal, and full of nuance you won’t find anywhere else. From old-Paris bistros, a wine bar run by one of only 30 maître-cavistes in France (master wine merchants with access to rare bottles), to the desserts you can’t miss at Tapisserie patisserie—and more.
