This week, we’re in Tokyo with Endo Kazutoshi, the Michelin-starred sushi master behind Endo at the Rotunda and one of the leading Japanese chefs working outside Japan today.
Born into a family of sushi chefs, Endo spent more than 15 years honing his craft in Japan before moving to London, where he opened Endo at the Rotunda in 2019. Just six months after opening, the restaurant earned a Michelin star, establishing him as one of the leading sushi chefs in Europe.
Most recently, Endo at the Rotunda won UK’s Best Restaurant at the GQ Food & Drink Awards and was named No. 1 in Harden’s Top 100 Best UK Restaurants. This month, Chef Endo opened another restaurant, ENDO, an intimate 10-seat omakase counter, accompanied by a bar, Moga, located just above.
