This week, we’re in Athens, Greece with Chef Petros Dimas, the Chef Patron of Makris Athens—widely regarded as one of the country’s top dining destinations.

Under Petros’ leadership, Makris earned its Michelin star within a year of opening. Most recently, it was named ‘Best Restaurant in Greece’ at the World Culinary Awards, received two Golden Hats from Athinorama, and was awarded three stars by the FNL Guide—three of Greece’s most prestigious restaurant awards and dining guides.

Below, the Michelin-starred chef shares the Athens restaurants he sends every visiting chef to—from a 1930s taverna where two grandmothers have been cooking for over forty years, to the wood-fired restaurant that changed Athens’ dining scene, the wine bar with the best Greek wine list in the country, the one ingredient that grows nowhere else on earth (and where to buy it), and much more.
