This week, we’re with Brian Limoges, executive chef of Enclos in Sonoma, which was just awarded its third Michelin star, making it one of only 14 three-Michelin-star restaurants in the United States.
Brian’s rise has been extraordinary. Enclos earned two Michelin stars in its first year of eligibility, then claimed its third just 18 months after opening, all under a chef who is only 37 years old. Before Enclos, Brian cooked in some of America’s most celebrated kitchens, including Atelier Crenn and the three-Michelin-starred Quince in San Francisco.
Below, Brian reveals the restaurants he takes visiting chefs to, the wineries he recommends most, the food products you can’t leave the region without buying, and more. It’s everything you need to experience Wine Country at its very best.
A Google Map with all of the locations mentioned is provided at the end of the interview.
