This week, we’re in Budapest with Hubert Hlatky-Schlichter, founder of Michelin-starred Babel Budapest and one of the leading figures in the city’s food scene.

Forbes has called Hubert “one of the most important actors of Budapest’s gastronomy,” and Babel has earned recognition well beyond Hungary. The restaurant was named International Restaurant of the Year by Decanter, has held a Michelin star since 2019, and was named Hungary’s Best Restaurant at the recent World Culinary Awards.

Hubert’s group today also includes KIOSK, which has been recognized by Gault&Millau, one of Europe’s leading restaurant guides, and Papi Restaurant & Farm.

Below, Hubert shares:

  • The restaurants he sends international chefs to first, from the old-school institution for traditional Hungarian cooking to the local bistro he visits all the time

  • The Hungarian dishes you cannot leave Budapest without trying, and the best places to experience them

  • Why Hungarian white wines are world class, the producers to look for, and where to buy the best bottles to bring home

  • The 160-year-old café where you can sample the best Hungarian pastry in Budapest

  • The best places for a drink with Budapest’s most beautiful views, and more

(A Google Map with all of the locations mentioned is provided at the end of the interview.)
