This week, we’re in Rome with Gabriele Gervasi, chef de cuisine of Il Ristorante – Niko Romito at the Bvlgari Hotel Roma, where he also runs the kitchen of the Bvlgari Bar.

Gabriele cooks under Niko Romito, one of the most influential figures in Italian cooking. Romito is the executive chef of all Bvlgari Hotels and the three-Michelin-starred chef behind Reale. He personally selected Gabriele to run the Roman kitchen when the hotel opened, and under Gabriele’s leadership, the restaurant has been recognized by the Michelin Guide.
